Title: Blazing Pistachios

When smoking the Blazing Pistachios do you still put water in the water pan? Do you still use water in the pan after you finish smoking them & are trying to crisp them-up?

Water in the pan during the smoking period to extinguish the burnt pucks.  After the smoking period on the nuts the water pan is not critical because all you are doing is drying them and there is no fat dripping that the water pan would ordinarily collect.

That reminds me, I need to make some more of those pistachios!
