Title: Cheese storage

Hello, I'm going to try my first batch of cheese soon and have read up on techniques, temps, etc. for smoking. I will vacuum seal it and refrigerate for roughly 30 days before digging in... My question is how long exactly will the cheese last in the fridge, vacuum sealed before it must be eaten?

if the seal stays unbroken    a long time   the one I just opened was smoked in January and it ages very well.

I just opened a Motzyrella that was 3 years old and was just as fresh as the day I vac sealed it.

That's awesome. Sounds like I'm going to have to buy another refrigerator for storing cheese!
