Hi old redneck here smoking for a few years with little aluminum boxes they know who the are, not really happy couldn't cold smoke with them. Mostly salmon smoking during fishing season. Now a whole differnt ball game picked up a never plugged in or used 6 rack digital with case of 4X120 pucks and 8 extra racks for 450CDN. Sweeter is better, did ribs for the first time yesterday 7 hours and fall off the bone good next time more sauce and some more salt. I loaded the pucks manually 1.5 hour smoke 3 totally used up pucks. Seven for dinner and not a rib left but lots of smiles and a fat bone filled dog.
Sardine can and loose chips to use up old chip stock, I did say REDNECK didn't I.
Question If I lay it down and put the generator inside the smoker onto my side car where do I plug it in ????????Hmmmm
Well had a second go round yesterday, Canadian bacon in the fridge smoking this comming friday after the cure is completed. Yesterday started at 12:15 for 6PM diner two spatchcoked large chickens 5.5 hours to very close to perfection needed 2:30 in the nuke to to make near perfect, no pink at the thigh joints. Can hardly wait until the salmon come in got a fishing licence first time in 17 years, smoked boneless fillets and candied jerky are on the list this year for sure.
My 6 rack digital is the Rolls Royce of smokers compared to my two old top load little chief Pinto PITA'S. Might modify one of the old boxes to put the digital controller farther from the main cabinet for real cold smoking. Also used a sardine can on the smoke burner plate with 3 full loads of loose cherry wood chips this worked great to use up old smoke chips.

I started my "career? :o" of smoking salmon with a little chief many winters ago and gradually added another and then a big chief. I smoke in excess of 250# yearly and those little smokers turned out a whole lot of smoked salmon. After buying a 6-rack I gave away the "chiefs" and then bought a Bradley cold smoke attachment. Your old smoker would make a great cold smoke attachment with very little modification. a length of aluminum flex duct pipe, a couple of pipe connectors and an adapter plate for the SG connection on the tower and you're there. The LC will make a good heat sink to keep the smoke temp. down. Gonna make your side car awful crowded though............
sounds like your getting the hang of it. a couple more smokes and you'll be hooked forever

Far to late for that at this point
Canadian bacon/corn meal crust smokes on friday this week really firm and not much liquid coming off it
Bacon will need work my fault forgot to rinse good and dry the night before smoking so was real salty and in to long (life interupus) but still good for breakfast and now gone with no ill effects next time follow guide lines.
