Looking good.

It is still too hot here. Hoping for a cold front to cool us off so I can smoke my Christmas cheese! (without messing with ice and having to worry about melt)

was about 27f here used the puck burner and stayd around 70 deg. 1hr 40 m of apple and 14 lbs  vac sealed and waiting.

Good time to get it done so it has time to mellow before digging in on Xmas.  :)
I'll be doing some Cooper Sharp and Cooper Black Pepper cheeses in a week or so along with some Horseradish cheese. These always go great during the holidays.  :)
