Title: One more turkey question

I am going to be smoking a 12lb turkey and if I smoke it at 250 degrees for 2-3 hours, should i move it to the oven to get the skin to crisp?  what are your timelines for turkeys?

I would recommend doing exactly as you indicated. Last year I did a 12 pounder and this year a 13 pounder. Both were done in the pellet pooper. I smoked for 3 hours at 250 and then cooked at 350 until done. Both times it took 5 to 5 and a half hours. The pellet pooper has very tight temp controls. Will probably take longer in the Bradey for 3 reasons. Temp control, time to get to temp, and heat is not as dry as in pellet unit because pellet pooper is actually burning wood instead of smoldering like the Bradley. Your house oven will probably fuctuate n temps as well.
