After my new Bradley smoker was seasoned my first smoke was with some cheese. I done cheddar, white cheddar and some gouda. Smoke for just over 2 hours using the cold smoke adaptor. I could not resist tasting the cheese before it was vacuumed, and it is just amazing. Nou I will have to do the long wait for 3 weeks or so before using it.
