Title: Salmon and Honey

Hi guys,

My friend supplies me with a regular batch of honey goodness straight from her hive.

I wouldn't call myself a novice cook. I'd call myself a caveman who just discovered fire can cook things. That's my approximate level of cooking ability.

I don't know how to best bring out the honey flavor in smoked salmon using the raw honey I have. Input?

It would be interesting to try substituting your honey for the 4 lbs brown sugar I use in this brine recipe....If I had that honey source, I'd do it in a second!
