Well the day is fast approaching but not fast enough.....ordering my smoker at end of week (payday)....I love veggies on the grill and although this wont be my first try I thought I would post it...seems the VEGGIE dept is lacking..not good??? mushy??? just curious if the time of smoking is worth the taste?
Smoked Vegetables
Yield: 6-8 servings.
2 zucchini, sliced in 3/4-inch-thick disks
2 yellow squashes, sliced in 3/4-inch-thick disks
1 eggplant, sliced in 3/4-inch-thick disks
2 red peppers, deveined and cut into 3-inch-wide strips
2 yellow peppers, deveined and cut into 3-inch-wide strips
1 pint cherry tomatoes, stemmed
About 3/4 cup of your favorite bottled Italian salad dressing
Place all the vegetables in a disposable 8-by-12-inch aluminum tin.
Pour the salad dressing over the vegetables and toss, making sure
the vegetables are well coated.
Put the tin of vegetables in a 250-degree smoker for 4 hours.
Before serving, remove the vegetables from the tin and then grill
each side lightly.
NOTE: To smoke whole ears of corn, place the corn, in its husk (it
isn't necessary to coat with salad dressing) in the smoker for 6
or 7 hours.

I too grill veggies all the time but quite honestly, have never smoked them...I love the grilled flavor...am skeptical of the smoke...

I like to do whole onions & peppers in the smoker. I'll let them in anywhere from 1-3 hours depending on what I am going to do with them. I've done corn quite a few times (see earlier posting in veggies). I threw 4 big portabellos in last week for about an hour or so(after coating with ceasar dressing). WOW, almost like eating meat. One other thing I like to do is to smoke the veggies for a while & then throw some olive oil or butter in a pan and do a stir-fry with the smoked veggies. I've even smoked garlic for a bruschetta appetizer(bread, cherry tomato, garlic, cheese etc). I haven't made a medly and smoked them all together like your recipie though.
