Title: Smoked bacon wrapped chicken thighs

Sunday I skinned and de-boned some chicken thighs. Then dusted with some rub and into the fridge overnight.

Monday morning I made a mix of Philly herb and garlic with a herb and garlic flavoured goat cheese, about equal parts. Thats all for my stuffing.

I used 2 slices of bacon to wrap each thigh.

Then dusted with a little more rub.

Into the smoker set @ 250 for 3 hours with cherry.

Around the 2 hour mark I spritzed them with apple juice.
Final result was good. Internal temps were in the 170 area
and the bacon was past the rubber stage and edible.
Ate 3 with supper and will vac seal the rest for future days.
All in all I am real happy with this cook.

Bacon wrapped chicken thighs! Now I'm curious and will have to give them a try as well, thanks rnmac :)
