Title: My observation first Pork Shoulder

Well I did my second smoke last weekend in the Bradley.  It was a 6lb pork shoulder.  It took about 12 hours to finish.  One thing that I was suprised by was how much the temperature dropped after I turned the smoke box off.  The temperature went from around 230 to 200 in about an hour.  I'm guessing that this is normal?  I didn't realize that the heating element for the smokebox would contribute so much heat.  Atleast I know for next time that I'll need to adjust the temperature slider to compensate.  Otherwise, the shoulder turned out great.  I wrapped in foil and a towel for a couple of hours and it shredded very nicely.  I made it for a few family members that had never had pulled pork before and they all loved it!

I have also wondered about how much the smoke generator adds to the internal temp of the smoker.  I have posted this question in a couple of times as a side item but never really gotten an answer.  If anyone knows I hope you'll share with the rest of us.  Thanks[:D]

I'm not sure the exact amount of temp that the plate will produce, it all depends on outside forces.  30 deg is probably on the low end.  Since it is hard to compensate on the cabinet heater to make up for turning off the smoke generator, I simply don't.  I put in the number of pucks I want to use and use the smoke generator to help me produce heat until the my meat is done.

I think I saw that the cabinet heater element is 500 watts and the burner element is 125 watts.  So turning off the burner would result in 125/625, or a 20% loss in heat.  Assuming an ambient temperature of 80 degrees, a drop from cabinet temperature of 230 to 200 degrees would be 30/150 or a 20% loss in temperature above ambient.  

It's always nice when the math works out...

I'm with Whitetail...Once I get it to temp., I don't mess with things and just leave the element on.  One thing I have learned over the years is consistent is just as important as low and slow when it comes to the temperature.

But then again, opinions are like you know what...we've all got them!

I bought a Bradley smoker so I wouldn't have to think. Now I find out I have to do a bunch of sifering just to cook a butt. Man, whats a red neck to do? I haven't been this disapointed sence I set the cruse control on my new van and got up to get a beer out of the cooler in the back.
