First off, forgive me but I forgot to take pics:(( My bad. Anyhow, I brined 3 racks of pork ribs for about 2 hours in a simple salt, sugar, water, and a touch of maple syrup. I then dryed them and coated them in a mustard based slather. I added maple syrup to the slather which I think gave the ribs are really tasty sweetness. I sprinked them with rub and left them in the fridge over night. Today I put them in the smoker and used maple wood for the smoke. I was way behind schedule today so I smoked them for 2 hours only. I then wrapped them in foil, added some apple juice, and placed them on my grill. I cooked them another hour with indirect heat. I was running a temp of about 350 degrees. I took them out of the foil and placed them over the hot fire for about 10 mins. During this time I lightly coated them with some TX bbq sauce. They turned out fantastic. This is my first smoke using maple wood and I'm very pleased with the results.
