Title: Maple Chipotle Pork Rub recipe

After tasting a very good Maple Chipotle grill sauce from Stonewall Kitchen, I decided to try to replicate the flavors in a rub.  This came out great!  I rubbed a pork butt with maple syrup and then rubbed this on liberally the night before smoking.  It created an excellent tasting bark and complimented the pork and hickory smoke well.

Ted's Maple Chipotle Rub
Yields almost 2 cups

1    cup maple sugar
1/4 cup kosher salt
1/8 cup sweet Hungarian paprika
1/8 cup chipotle powder
1/8 cup granulated garlic
1/8 cup ground cumin
1/8 cup Coleman's dry mustard
1    tbsp coarse ground black pepper

I have two tenderloins sitting around asking me what to do with them. So I said to myself "Self, you better try this recipe from Ted". I'm just going to lightly cold smoke them then finish in the oven. I'll let you know what happens.

I tried this rub on a beer can chicken.  Good, but a bit salty.

Tenderloins turned out great. I went real light on the rub and the flavor was excellent.
