I've read several post on here about smoking a turkey before frying it. I love fried turkey so I have to try this!
When I deep fry a turkey I'm very careful about time and temp. I keep the oil at exactly 325 degrees and the frying time is 3 1/2 minutes per pound. This has always worked great.
Here's my question...when smoking, how much does that effect frying time? I would assume not much because your cold smoking right? Also, which wood is best and does the smoke flavor really come through enough to make it worth it. I plan to inject with creole butter so should I do that before or after the smoke??
I would hate to overcook it because we're having about 25 people over for Christmas!! :)
