Hi all.
I have been lurking here and at a few other smoking sites over the last couple weeks, trying to decide on what smoker to buy. I decided on the OBS because of a few reasons, easy to use with minimal supervision, great reviews, oh yeah, and $100 of at $279 at Canadian Tire. I also bought 2 boxes of 48 biscuits at CT and I got 120 on eBay for $33 to my door today as well. I still need a meat thermometer and a couple things. Unfortunately I am leaving town for the weekend in the morning, but look forward to my first smoke next week.
Lots yet to learn, but it will come with time and practice I am sure. I have done a bit of smoking using my propane BBQ, indirect heat, and a smoke box. I have read about a few mods to make too, and may do that in time.
I also learned today not to use in under a covered veranda. I set it up just outside the back door and the smoke wafts in to the house when I open the door. I am just seasoning in right now. ;D

Thanks Mike, it sure does seem friendly and helpful around here, I figured that out in my days of lurking. I love these online communities for the sharing of knowledge and fun. I have a couple other favs that tie in to a couple hobbies, mainly photography and canoeing.

so that was you biddin on those from surrey?? so was I see them go sky rocket at about 8 seconds left i was just laughin thinkin how long it will take someone to be on the forum ... cheers to good bidding if thats the ones you are talkin about... I was talkin with that guy for a few days getting all the specifics... I am doing 12 lbs of deer jerky tommorrow either have to find some more racks or just do a few batches... Its soakin tonight and smoke tommorrow

Yep hotrod, that was me. Sorry if I outbid you. That deer jerky sounds great. I haven't hunted in a couple years, just too busy, but next year I am going to get out for sure. Don't retire the dehydrator too soon. You might like to finish your jerky in the dehydrator. I find I like the finish better. After the smoke is done in the smoker, you have an oven. Most dehydrators have a fan that moves air and a heating element. The movement of air (IMHO) does a better job of removing moisture from the meat and does it more evenly. It is also easier to rotate the trays for more consitant and even drying.
Thanks Gizmo, good advice on the jerky, makes sense. Smoke in the smoker, then dry it to the level you like in the dehydrator. I wouldn't get rid of the dehydrator anyway, I use it lots for prepping food for longer canoe, or backpacking trips lots too.

Welcome Bear, and enjoy. I agree with Gizmo on the dehydrator. I've done jerky with and without using it, and I think the dehydrated version comes out much better.

Thanks Ontrack, even though I don't have any venison in the freezer, I may just try some beef by marinading it, flavouring it in the smoker and finishing it in the dehydrator.
I am trying a new recipe today with ground up chili peppers... will see how its going to turn out in another 7 hours the smoke is flyin and I hope i wake the neighbors... Then its time to go fishin and for a few coolies when its done!!! Puts out hat for chip donations... jeeze this is the same as poker ... everyone needs chips!!! OK, OK, been hammerin' since 3pm. I've eaten the dog's hair, been to Vegas twice, just had a weak moment. I'm glad you guys won't kick a man when he's down. Every SOB that I work with has the flu, but since I'm tougher than they will ever be I'm trying to ignore the fever, body aches and chills that I've had all day. I mowed 5 acres, smoked a brisket as big as Texas, and I'm still sitting here cross-eyed sh!t faced and have a big old Turkey and Coke on my desk. And I'll probably feel like sh!t in the morning, but I'll come right back here for the compassion that you guys offer to a friend who is feeling a little less than great. :P :P :P :P ;D
That turkey will chase them bugs away. Hope you feel better from the flu bugs, the rest will take its course.

And, LQ, I did make Bloody Marys this morning early, but after a couple of sips I gave mine to my wife, so she had 2 and I had a fever :(.
