Title: Smoked Mullet

Anyone have a recipe for smoked mullet?

I live in Florida on Charlotte Harbor and mullet are about as common as mosquitos here.

My neighbor smokes them on a offset smoker with Mangrove wood - but won't really fill me in on temps, etc.

Anyone do them before?

If so, how do you clean the mullet? fillet the sides or remove the head and organs?

I have always just removed the head and organs.  I usually fry.

Salt, pepper, hot smoke say around 190 - 210 until meat flakes would be my recommendation.  I have not smoked them yet, but that is how an uncle does his with great results.  When I grill or bake I add lemon juice.
