Believe this or not. If there had been no Oak I would not have purchased the Smoker.

My Grandparents came from Poland, and I can tell you that the best smoke polish sauage I have ever eaten was smoke with oak only. Years back I made a smoker out of an old refrig. The fire box was a 55 gal. drum laying on it side. I smoke a full size ham (not fresh ham) for close to 6 hours. The temp. never got hotter than 160 degrees.

Took it to the church and man it did not last long at all. Of course the wood was Oak. If you have not tried Oak I strongly suggest you give it a run for its money. Hopefully these Oak chips I have yet to try are made from the correct oak as there are several types of oak trees. If not then I will have to figure out how to make my own chips.
