Title: Garlic powder

Has anyone taken Garlic from fresh to powder ?

I'm thinking cold-smoke -> dry -> grind.

A while back I picked up a bag of garlic at Costco's and cleaned it and dehyrated it. I cut some of the cloves in half to dehydrate them faster. They came out okay and ground some into a as much of a powder as needed and some just a rough grind. I just don't think it's cost effective. After drying a 3 lb. bag it shrinks down to nothing.
on another note, I picked up some garlic powder from a website where I buy my dried chile's. This stuff was literally a powder, like talc. Needless to say when you grind something that fine it looses its flavor real fast. I wasn't too pleased with it.

I bought some like that as well at Gordon Food Service.  The price was right but the flavor was wrong.  I also had some onion like that which had a little more aroma to it but was still pretty much trash IMHO.
