Title: Time & Temp for smoking sturgeon?

Hi all,

My first time smoking fish.... Going to brine then smoke some sturgeon. Any insights as to how long and at what temps work best?  I've searched the forum but couldn't find much definitive info on Sturgeon.

I've never smoke nor eaten sturgeon. The best was to smoke fish is to use Kummok's smoking method; just scroll down until you come to that part (not sure if the brine will work with sturgeon; if Kummok see this post he would be able to tell you).

If you have an instant read thermometer, take the fish out when they hit an internal temperature of 140°F.
