Title: doing a double smoke and need some input please
Post by: armpower on December 30, 2008, 06:29:46 PM
hey everyone it has been awhile for me on here.  hope everyone had a good christmas and is looking forward to a great new years.

i am smoking a 7lb brisket and a 7lb pork shoulder i will put them in tonight before bed.  i will take the pork to 197 and pull it, this has been fab in the past.  not sure what to take the brisket too??

i plan to serve these new years eve  i  figure about 15 hrs to get done and that will give me time to ftc or cook longer if needed and still be ready for the party.

any input on this would be great.

happy new years!!!!!!!!!!!

I would take the brisket to 190 or so.

Yep, I agree with FLBR.

I take both my briskets and my butts to 190F and pull.  Make sure to take advantage of the pulled pork by smoking it over top of the brisket.  The brisket will catch the pork droppings and you'll be extremely happy.

I agree.  190 on the brisket, and put the butt above the brisket.

Happy NY.
