also if you have built your own smoker. you can take this drying/carrying rack loaded up with bradley meat racks and drip pan. take off the rubber feet and put the whole thing into your homemade smoker. it is 23" tall 10" wide and 16" length. just an idea.

To qualify for entry a member has to post a recipe smokin' or non-smokin' that has not been posted before that they have personally used and can recommend, or a member has to have contributed to a minimum of 4 postings per month. A given winner of any one month would not be able to enter into another giveaway for 90 days. This rule would be for obvious for reason I know I don't need to get into.<hr noshade size="1">

This is a great idea. If once a month is too frequent, we could hold one every 3 months. That way there's some time between the raffles, but not enough to let new members get too "cold". Perhaps the Advanced Members could "sponsor" it, with different prizes each time (bisquettes, accessories, rubs, etc). We just need someone to keep track of the $$.
I would like us to think about coupling the sponsorship to some sort of membership recognition. I had posted something along these lines in a previous post, but this could be a nice way to let all Forum participants know who has "stayed the course". We could have a Master Member category for those with, say, 300+ posts, 1 year of participation in the Forum, and sponsorship of at least half of the raffles held. Millenium Members would be those with 1000+ posts, a year or more of membership, and sponsorship of >50% of the raffles. These are just "thinking out loud" ideas, so feel free to say "naaaaw".
Regardless of raffle frequency, I like your idea of entrance requirements, especially the 4 posts/month rule.

Just hope that's direct air from the US to France, because if you routed that through Canada, we'd make you register your picture of a gun, and apply for a license. That's assuming this is a regular non-restricted firearm, not a pic of a handgun (restricted) or assult weapon (prohibited)[:D]

What a vast amount of knowledge and experience there is on this forum.
My background has been smoking sausage and fish as a hobby.
After purchasing the BS and reading the posts here I have done Butts, Ribs, Chicken, Jerky and of course sausage with great results. Soon to do Bacon.

I've copied your recipe for smoked salmon and I'm looking forward to trying it.
With the 2 pounds of brown sugar does this put it a little on the sweet side?
I belive the recipe is for apprx 10 pounds of fish, are your able to do that much in the BS at one time?

Sterling!! Almost 100 miles, but just around the corner in Alaska travel [;)] Sounds like you're practicing for the upcoming March King Derby! Hope to hear back from you on how the fishing went. My boat's tarped until late March, so I'm anxiouos to hear how the King bite is doing from someone that DOES get out on the Bay this time of year. I was just up in your area last Saturday, stealing your rainbows from the Swanson River lakes.....
Re: Your "how many pounds per brine" question.....my last batch was about 45# if I estimated weight right. It was 16 racks/2Bradleys full of mostly white feeder King. I'm gonna try posting pics, (per Olds MOST excellent instructions!) today. I use one of the Coleman blue "The Cube" coolers and fill it pretty full of brine (double my recipe ingredients) and fish. It is definitely not too sweet for my taste and no one that eats it has said anything about too sweet (and most of my GOOD friends are PAINFULLY honest). I am however, thinking about lessening the amount of salt or switching to Yoshida Original Gourmet Sauce instead of the soy or terriyaki....last batch was a little salty for this ol' cardiac patient

Just how many smokers do you have? That's a lot of fish. I like SMOKEHOUSE ROB'S racks and they very professional; however I got to ask what is it about yours with the screening that you feel is wrong and as such are going to replace it?
Where I live a screen unit is a must it is outside. Or do you have some sort of screening that covers SMOKEHOUSE ROB'S?
BTW I just love the background of that photograph. You truly live where I would like to.

2 Bradleys, smoking about 45lbs per batch, on 16 trays. The lower Rack Rack is spruce with screen stapled all around except front loading flap stapled at top only...it's okay but bulky and Smokehouse Rob's is lighter and waaaay cool[8D]
