Title: Oily Fish
Post by: CheapThrills on January 22, 2004, 06:35:01 PM
I cold smoked some atlantic salmon fillets yesterday and they are way to oily. What can I do to get some of the oil out? I looked on the internet and can't find anything about it. Right now I have them hanging in the cold room with the hope that they will drip some of the oil out. I looked this morning and hardly any oil has dripped out. I am hoping someone out there has smoked atlantics and has some words of wisdom. I [:(!]

See reply to your message in cold smoking.

PS I normally put on the salt cure before smoking and then wash off the cure and let them dry for a bit before smoking, though i believe doing it after will be no differant just wash of extra after curing
