Title: My First Cheese Smoke

Ok this is a first for me. Got some swiss and pepper jack smoked. Also did some pnuts  ;D Got the cheese wrapped and going to age. Dont know how long i can wait  ;D

I can tell you from past experience that I could only wait long enough for the cheese to get cold again before I had a sample. Wait it never got warm!! I need a food sealer it is just two easy to unwrap a block of cheese in plastic wrap. Looks good for a first cheese smoke. If you can wait for atleast 5 days of the 10 you will be rewarded though Nepas

Hey Nepas...I go a week before the taste test...listen to me.... I sound like I know what I'm talking about... :D Anyway...I have found 10 days to be even better!! Smoking some Monterey Jack tonight...it's really windy (yeah!!!)...about 65 out...should be ok!!!

Looks good, Neepers!  Hold on as long as you can.  I just gave a buddy a block of cheddar I did in November (I had it hidden) and he called me yesterday wanting to know where he could buy some.  Said he took down the entire 1 pound block in one setting. Said the smoke infusion was incredible throughout every bite. I still have a block of horseradish cheese from November waiting in there with my name all over it.  One day when the kids are at school and Momma is at work....I'm taking that bad boy down!

Ah yes the waiting period has begun, it'll all be worth it Nepas!  It amazes me that of all the smoking you do this is your first go with cheese!  Be patient grasshopper!   ;D

Man those guys were funny, saw them on a roast not long ago, boy did they get old, Remember the bit with them starting the car? that's one of my favorites

Just picked up a Foodsaver v2440 today for $100. Now to get some cheese and try this 10 day wait thing. Plastic wrap only lasts about 5-7 days

For anybody in Canada the best price I could find was with Costco online. You can get packages of 100 bags, 8" x 12" for $24.99 This price includes shipping as well. I have tried them and they worked 100% perfect. I was buying they by the roll but I have found it's easier having the pre-made bags plus these are less expensive than any rolls I could find in Canada. OK, OK. You guys are killing me. Went out this morning and bought some Monterey Jack (plain) and Monterey Jack w/Jalapeno.

Your in for a treat RK, keep your temp below ninety by running just your SG, fill your bowl with ice a couple of times I've placed another bowl full of ice on the bottom rack.  Worse comes to worse you might have to prop open the door, which is what I usually have to do here in my neck of the woods.  Then apply your choice of smoke, probably not mine  ;D  and go for about 3-4 hours, let rest on the counter vac seal and fridge for at least 10 days (longer just makes it better) which is the hard part!  Hope that helps a little, Good luck and keep us posted!

Everything did go to plan like you guys said. Pulled the plug out of the back of cabinet, smoked for 3 hours, Had 3 pans of ice had to change once each and the temperature never went over 81°.

Well. we couldn't wait for tomorrow to come. We cut into the Montery Jack this evening, all I can say is mighty mighty fine. It was well worth the wait. Now we're looking forward for two more days when we can top it off with our Canadian Bacon, an egg on an English Muffin.

My recent fav is open faced with an english muffin with butter and hot wing sauce spread on the muffin, Canadian bacon and smoked peppperjack. I do it in the toaster oven until little dark spots appear. Plop a poached egg on top and go! Have never taken pics cause of eating frenzy!

We sliced up the CB but didn't get it on the muffin. We had it on a Onion Kieser roll with a fried eggs. Really delicious, the CB was a little too salty for our liking. Next time we make it we'll cut back on the salt, but was impressed how well it turn out.
Last night for dinner we cut into the smoked jalapeno jack cheese. Wife took it and embedded a piece in the center of the hamburgers she made. Very, very nice.

Not my first cheese smoke but first time smoking then putting in vac sealed bags. did about 7lbs of pepper jack yesterday. Ambient temp was 64 box temp never went above 73 with a 1:40 mins of smoke. Didn't use cold smoke setup just a foil lined tray with ice in it. Now to do the 10 day waiting thing that you guys talk about. I might be able to make it.

I came up with this as some friends and I were using  some wing sauce as a dip for Pretzels. Later on for a late night snack it seemed a natural for the Canadian Bacon muffins.
I use Louisiana Supreme Wing Sauce. Not found in stores here.
