......  note, popped into a local restaurant that makes jerky, smoked salmon and everything inbetween. asked  ............  4 hours and he said he only uses #1 in one of his recipes and thats just to help keep the color of the meat. ............  40 degrees and 140 degrees. Doing whole muscle jerky you are going to be smoking and drying at 150 to  ............  cure. If you are running the smoker at 180 to do jerky you are cooking it and not smoking or dehydrating  ............ . My jerky is smoked and dried at 150 degrees and not cooked  ............  180 degrees. If you are making ground beef jerky then you should be using cure no mater what temp  ............  a lot of sausage makers on this forum as well as jerky makers and I am sure they chime in about the cure  ......

......  stated numerous times before I am a jerky junky and always like trying different styles and  ............  of jerky. Well I think I maye have found one of my  ............  ways to make jerky.  I did a 5 lb batch and the base of the jerky  ............  simple. I bought a bottle of Cabela's Jerky Juice Smokehouse Original. One bottle is good for  ............  as the smoker was heating up.  Put all the jerky which was exactly 6 racks onto the frog mats and  ............  time a lot of the juices seemed to drip off the jerky as it was drying, some were very wet so I patted  ............  steady at 165 for 3-4 more hours. For most of the jerky, it was done around the 3 hour point but I left  ............  up.  Let me tell you this was some of the best jerky I have ever tasted. Very moist and not overdone,  ............  this recpie now and tweak it for spicy and sweet recipes as well. ......  I decided that since I haven't made any jerky in about 2-3 weeks or even taken the cover of my  ............  rack I'd make some jerky this weekend. Besides, trout season upstate PA  ............  next weekend and my camp has been requesting jerky for the trip so I figures why the hell not!   So  ............  how much I like it yet, I find that I like my jerky mush better after it sits a few days without  ............  think I'm still going to test drive some of these jerky recipes until I find my "chosen one" As of now  ............  of my favorite recipes is my sweet heat which costitutes a mixture of  ............ 's Sweet Hot jerky Mix with my own mixure and my own BBQ mix.  ............  pieces out when done do prevent burnt and dry jerky.  So here we Go. ...... 's smoked wings from the recipe sight 5 lbs of jerky: 2.5 lbs High Mountain Hickory, 2.5 lbs High  ............ ! The loin is still in the smoker as well as the jerky.  I will post some pics of the finished loin  ............ , the jerky will be good as usual I'm sure!  I have gained so  ............  this site and I want to thank you all for your recipes and great insight! ......  to the forum from Nebraska! Yes, lots of good recipes for deer. The smoked roasts and loins turn out  ............  in the Bradley. Also, check out the jerky section. You can use deer for all of the beef  ............  able to experiment with some of the beef or pork recipes substituting bear meat! ......
