mellowing smoked cheese

I dont have a vac sealer.  What is the next best thing as far as letting the cheese mellow.  Is plastic wrap and ziploc bags ok.  Thanks

Wrap tight in plastic wrap and squeeze as much air as you can out of the zip lock.

That will work for ya.

I hope so, that is how I did mine 12 days ago. 2 more days and I will try it. I can't wait, first batch of cheese for me.

Thanks boys,  that is what i have done.

I do a lot of cheese each year and very rarely vac pac any of it. Wrap with plastic wrap and put into a ziplock bag. It will say good for many months. I have cheese in my fridge from last October and its just fine.

I started out vac sealing all of my cheese until my friend Pens pointed out that it really wasn't necessary.  Plastic wrap is a darn sight cheaper than vac bags too!

If you buy milk in the bags they work excellently with vacuum sealers. I save all mine for that.
