Hi,

I'm a French expat living in England, proud owner of a 4-rack digital Bradley smoker since yesterday!

Let's try it with cheese and salmon this week end!

Hi aerostef and welcome to the forum!  Make sure you let the cheese rest in the fridge a couple of weeks prior to use.

congrats and welcome. Also don't get the cheese of 90 F or it will melt.

Welcome to the forum aerostef.

You'll love the smoked cheese but like everyone says, you need to let it sit in the fridge for weeks.  Here's a link that shows my first cold smoked cheese using the cold smoke adapter and some ice cubes in the tray to keep the temperature down.  http://forum.bradleysmoker.com/index.php?topic=18373.0  Hope it helps.  Let the fun begin  ;D

Smoking and low and slow cooking requires patience.  It took some time for the cheese to age in the first place.  Now, give it some time in the fridge.
