Thanksgiving Day Turkey and Ham

Brined the turkey and smoked with apple/maple for 8hs in all, ham took about 6hrs.

It was the best turkey I have ever had in all my 50yrs. Moist/sweet smokey flavor.....boiling the carcass right now for soup.

Ham was also out of this world. I really have a hard time putting it into words. The whole process of brining, cooking smoking, is really a blast.

The food has been indescribable!   :D

Like I have said before, I lurked here for a long time. I was so impressed with what has been posted here, I had to get a Bradley. I got it in around August, and have used it at least 30 times.

I couldn't be happier ;)

Did you throw the turkey in the oven to crisp up, or is that how that bird came out of the smoker?

I have been frying turkeys for the last 12 years or so.  After the first one we have not had one in the oven since.  This Thanksgiving, I cured and then cold smoked in the bradley first, then did the usual Creole Butter injection and let marinate over night.  Fried that puppy up and if it wasn't the best fried turkey I have had. :P
