Got a Habs Canadian Bacon Question.

If I take the Canadian Bacon to a IT of 145 is it safe to heat without any further cooking?  I usually cook it on the stove further before eating but I have a friend who likes it without any further cooking.

I know I have a whole document on this computer that shows all of the safe temperatures and handling but I can't find it and I am starting the smoke in the morning.

Hi Smokeitall;

Bringing pork to 145°F, is fully cooked and safe to eat. For pork he USDA recommendations, recommend 160°F for medium, and 170°F for fully cooked. But these are recommendations.

Having said that, you should cook your food to the temperature you feel comfortable with. Here is a link to the latest USDA recommendations, and today's more common internal temperatures for meats.
