Old School Brisket

Bisquettes are due to arrive today! (Won't let this happen again)  But could'nt go through the 4th without some brisket's.  All rubbed up and resting.



Into the smoker, with mesquite of course!  ;D



Time to rotate

Done with the smoke, and time for an overnight cook



Now its time for some FTC



All sliced up, the third one went to the neighbors!

WTS That looks so good I can almost taste it from here.

I hate it when you run out of the bisquette flavor for what you are cooking, I ran out of alder for the salmon I was cooking and had to use cherry.

Wow WTS.  Those briskets look amazing.  I've used your brisket recipe a couple of times with good success, though from the pictures you just posted I suspect my product does not really compare to yours. 

So I see I still have much to learn from the master, which I'm prepared to do as I just picked up a 48 pack of mesquite biscuits on sale for $14 (25% off) at my local Canadian Tire store.  Might throw a couple of questions your way before my next brisket attempt if you don't mind.

Where abouts in Texas are you from?  I ask because I grew up there.  Lived in Wimberley TX, which is SW of Austin, for many years.  My sister and my best friend still live there, so I'm down from time-to-time for a visit.

Coming from Lubbock, are you a fan of The Flatlanders?  We saw them in concert up here a couple of months ago.  Put on a great show, and brought out Tom Russell near the end to play a few songs.

Man, WTS, I wish you would learn to make brisket!  Those things look so terrible, that you need to send them to my house and I'll fix them up for your.  Can't guarantee a return shipment though!   ;D ;D  That is some serious looking brisket.  Had too much brisket leftover from previous cooks, so had to settle for ribs on the 4th.  And in spite of having surprise downpours halfway during the smoke and having to cover up the Bradley, they turned out pretty good, except used a new rub that was too sweet for me. 

Hey Salt, I'm originally from your way - San Antonio and Seguin.  My parents used to do the Wimberley Flea Market for quite a few years.  Watched them build Canyon, and used to fish it a lot, before moving, and when it had a lot of structure.

Awesome looking briskets.  I know I'm just getting started, and mine surely as good, but it's nice to see some pictures and think "hey, mine aren't too far from that!"

Just out of curiosity, are there any houses for sale in your neighborhood?   :D
