Are those going in tonight ?

They went in at 6PM, as I was pulling umpteen pounds of pork.

3 hours of Pecan Oak @ 220 degrees.   I'm about to go out at boat them up for the night and back the temps down. (sorry Pachanga, but these were heavily trimmed flats)

3.5 hours later..

Time to insert probes and boat up for the night.

Looks good squirt.  Don't clean you Bradley, you'll ruin it.  Heck, that's what seasoning is for.

Where there's smoke, there's food.

Squirtthecat.

You can't go wrong when you're smoking, Bud.  It's all good, just different.

I have a lot of strong opinions which I will express occasionally and sporadically.  They are worth exactly what they cost.  Nothing.

Did you read my recent post on Mustard Slather?  It is a must try on brisket and so much more; ribs, ham, poultry, fish, wild game, all manner of road kill and wild pig.  It'll make a flat stand up and salute, then lie down, behave and get tender.

I'll bet the flats turn out great.

Good luck and slow smoking.

Those look great Squirt!
I love the color that sauce makes on them.

Pachanga,
I think I've been to your casino in CA  :D

Carolyn,

Hope you broke the bank.  That is the Pechanga tribe's casino.  Different tribe from me.  However, I am proud to have a high percentage of American Indian flowing in my veins.  Unfortunately,  none of the casino dollars ever make it my way.  Maybe I should call up the Pechanga tribe.

I perused your blog. Nicely done and good information.  I enjoyed the excellent photography.  It looks as if you have found your own little piece of heaven.  The soil on your place certainly looks rich.  Well worth reading and I will spend more time logged onto your blog.  You and your family are not just talkers, you really can do it yourself.  The web produces some intelligent and useful information from good folks.  Thanks.

You may have read in the Brisket Pachanga Authentic Texas Brisket Recipe (http://www.susanminor.org/forums/showthread.php?t=532) that Pachanga is a Mexican slang word meaning "lively, wild, rowdy fiesta or party".

Squirtthecat, I am working on a manifesto titled "To Foil or Not to Foil, That is the Question".  Another rambling that will cost you nothing.

Good luck and slow smoking,

Pachanga

I am not as "think" as you "drunk" I am.
