Our "whatchamicallit"

It's not salsa, and it is not true chow-chow, since it does not have any mustard.  So, we don't really know what to call it.
Any ideas after you've seen this post, let us know.

Anyhow, we had a bunch of peppers in the freezer from this summer's harvest.
We thawed them, sliced them, and put them in the smoker for 3 hours of hickory smoke (cold smoke):

After smoking them, we put separated the hot peppers from the not-so-hot peppers, and put them in the 'fridge for several days:

Today we put them in the food processor with some onions, celery and tomatoes.

We then cooked down the batches - one made with hot peppers and one made with the not-so-hot peppers and then canned them.  We put one and one/half beers (12 ounce can) in the hot batch, and one/half can of beer in the not-so-hot batch.


This was our very first attempt at canning, so we hope that all turns out well.

We plan to use this as a base in enchilada meat, chili meat, and some sauces as well.

I'd call it "Good Eats"  ;D ;D  Make up your own name, you made it.  It looks great.  Make sure you put labels on the jars.  ;)

I haven't done any canning for a few years.  I've never had any bad results, either hot or cold.  It just takes a lot of sterilization and careful handling.  Make sure those tops pop down.  Then send me one.  ;)

Edit:  I'm sure Ka Honu could help you pick a name if you just sent him a jar of each.  ;D ;D ;D

Thanks for the cover, Arnie; you've got the traits of a great wingman.  I was at a party at the beach all day (It isn't always easy being me) and so wasn't able to make the offer myself.

Chillibusch sounds like a great name since you used chili peppers (Sort Of) and you used Busch beer

It looks like more of a salsa to me.  The thing that threw me off was the celery.  And, there really isn't as much tomato as I'd expect in a salsa.

(Dumb idea)  Maybe put it in a food processor, add some basil and cilantro and it would be similar to a salsa verde, except for the little red specs.  In any case, I'm sure it will be GOOD.

Maybe it's time for another contest.  But, seemore, you'rre gonna have to make a lot more.   ;D

Ahh, never mind.  I'm easy but not cheap.

Seems to me it's a smoked hot or mild pepper relish.  Whatever you call it, it sounds and looks good!  Nice work.
