Re-heat question-

Fellow Smokers-

When i reheat a pork butt should i target the internal temp as 190 again?  Can you reheat a frozen port butt (from the frozen state?)[^][^][^]

You should only have to reheat to 140 degrees.
I would try to get a start on the thaw before reheating a whole roast. Start the thaw in a microwave if necessary.

In the past seven months, I've been reading a lot in the area of food safety - hoping to do something in food sector - eventually. I can tell you what the NY State Health Dept. says. To reheat any food, you must bring it up to 165 degree F. and hold that temperature for at least 15 seconds. After that you must hold the temperature above 140 degrees F. The 165 degrees F is the temperature that all bacteria is destroyed "instantly". Generally you can reheat the food until it reaches 155 degrees, remove from heat, monitor with an instant read thermometer and the temperature should continue to rise up to 165 degrees.

I have never reheated a whole frozen butt, but have reheated a pound of frozen pulled pork, right out of the freezer. It was in a foodsaver bag, and I just dropped it in boiling water.
