curing trout

Hi im about to do a second smoke of trout and i am just about to dry cure them i was shown how to do this
put them skin side down cover with the mix then place the next one on top and repeat but if i do this the liquid that comes out of the fish would stay in the bottom of the tray so the fish at the bottom will be in liquid is this right

Yes, not a problem.  I'm assuming you're wrapping the filet stack in plastic wrap and weighting it down, correct?  If so, if you have a concern about the filet on the bottom laying in the liquid, turn the package over midway through your curing time but it's really not necessary.

I do my salmon that way and do flip it every 12 hours. I let it cure for 48. Then cold smoke for 3 with alder. Everyone tells me it is the best smoked salmon they have ever tried.
