Breakfast Sausage Recipes

I'm looking for a Breakfast sausage recipe without sage. I like the flavor of Bob Evans,Purnells,eckrich roll sausage. I have ordered different breakfast sausage blends and they all have to much sage for me.

Try mild Italian sausage's just did 24 next to 24 garlic/maple flavored and the Italian ones win by far.

I do one recipie for my wife (who also dislikes sage)[xx(]. I just salt and pepper to taste, and add 3 cloves chopped garlic per 10lbs of meat. I am at work for the next two nights but I will dig up the recipie and post it for you.

Here is a link for Dupey Equip. They sell a lot of different seasonings. The one that I have tried is the pork sausage #110. This is a good breakfast sausage for bulk or links. I usually added black pepper and buttermilk to it for a little extra flavor. If interested, give the lady a call. The last time I talked to her she said that they sometimes break up cases so you would not have to buy a whole case. Ask her what kind they sell the most of and maybe you will be able to buy a few different kinds of seasoning to test.

Sorry about that! This company also sells some dry marinades. They can give you more info on what is popular and possibility of breaking cases. The brand I have used in the past is the name "Leggs". I'm not sure if they are the company that sells this brand but they are very helpful and knowledgable.

This company also sells some very good cures. Again ask them what sells best. These cures will make some awesome smoked poultry especially if you are using a tumbler. There is NO comparison of a soaked product and a tumbled product. A little goes a long way.

And while we're on the subject, if there are any Aussie lurkers out there, please sign up & post. I had some wonderful breakfast sausages when there, and although I know they contained lamb, have not been able to figure out the right balance of meat or spicing.

They were similar to English bangers, but a lot more flavorful & with a heavier lamb taste.[:p]
