Hello Caneyscud:  Big country music fan.  Was in Nashville 3 yrs ago.  Love the place hope to make it back down again.  Thanks for the advice sure I will be looking for more in the future.

Niner,  Glad you enjoyed the visit.  

Kinda fun to live here with all the CM stars.  Used to be more around and you'd see them all the time.  AT one time many lived on this one road south of town.  If you took a city tour they probably took you down it - Franklin Road.  I live about 6 blocks from the likes of Tammie Wynette, Hank Jr., Ronnie Milsap (a friend of mine played keyboard for him for 19 years), Minnie Pearl, Chet Atkins (all but Ronnie Milsap have either moved or died).   Been out fishing and have seen Alan Jackson on his boat, Johnny Cash on the deck of his house, Porter Wagonner fishing as well as Little Jimmie Dickens and Sterling Martin.  See some at the Hockey Games - used to sit in back of Barbara Mandrel (she helped me learn the rules and what to look for - her sons played high school and college hockey), Taylor Swift about a month ago, Vince Gill and Amy Grant (regulars), Kid Rock, Joe Dee Messina, and Dierks Bentley.  Had to control a drunk (or high) Tanya Tucker at a company anniversary party, Drove Johnny Rodriguez through the snow to another company party, I can look out my office window at Alan Jackson Fan Club (but have never seen him there), had a beer with Tom T. Hall, Dixie Hall, and Will Dunn on Tom T's Bus and helped them build a few things at their Horse riding for the Handicapped place, sat next to Lee Greenwood when he sang his God Bless the USA song (that was intense).  For about 6 years ate lunch at a place that Eddie Arnold frequented as often as I did - also saw Ray Stevens there quite a few times.  At one time went to church with Eddie Arnold, Chet Atkins, and Minnie Pearl.  Played softball against a couple NHL Hockey players.  Showed Al Gore his IQ a few times (1).  Heard the front door open in our office one day, heard a voice I had heard before, went out to see who it was and almost ran into (literally) Naomi Judd - she wanted to see the boss to see if he would build her house.  Was in line at a store behind a tall young lady in a big black cowboy hat one time - Terry Clark, saw Naomi and Wynona at 3 different stores on Christmas Eve a few years back.  Alan Jackson lives a few blocks from the old family place and buys big cigar store indian carvings from a friend of mine.  Quite a few have bought antiques from my wife - Dolly Parton and her sisters, Taylor Swift, Lily Tomlin, Nicole Kidman, George Lindsey (Goober) (have talked with him several times).  Gone to a Bible Study at Darrel Waltrip's house.  He lives on the other side of town, but will see Charlie Daniels from time to time driving around.  Helped Faith Hill get out of an Outlaw Car at the first Outlaw race in Nashville (she looks very good even dirty, greasy, and in a fire suit)!   Joe Dee Messina must be a member of my church as she has done 2 benefit concerts here.  There's a couple of places in town, bars/lounges/speakeasy, where if you stay long enough, you never know who will come in and play at the free mic.  Just driving around or in stores and restaurants you occassionally see some, especially during Fan Week or at fundraisers.  Kinda fun!

Hello again Caneyscud:  Sounds like you get to see allot of stars.  We did the tour of the stars homes, went to the Opry, the wonderful hotel there.  Also hit several of the bars had a great time.  Watched Toronto hang on and beat the Preds the other nite.  When I asked about doing a roast or ribs you said a roast was probably easier.  Silly question around here I have not seen any chuck roasts.  Sirloin tip or inside or outside roasts.  I could do prime rib but likely not first time. :-[  What do you think.

Yep, seeing them can be fun.  But also irritating when you get behind a tour bus and can't get around it!   ;D ;D

Thanks for bringing up the Toronto Game!  Supposed to have gone but had to give away my ticket.  Hard to get a win when you go down 3 zip in the first nine minutes - but they gave it a good try.  The Preds did sweep their western Canada trip last week though.  Don't think Vancouver was too happy about it either!

Boy, you had me there with the inside and outside roasts.  Had to Google that.  The Outside roast sounds like what we call bottom round.  Not a very tender roast and doesn't have a lot of fat so wouldn't be my first choice - although some do well with it.  The Inside Roast sounds like the one of the two I'd pick.  Supposedly more tender.  Salt and pepper, Montreal seasoning, or apply rub, put in smoker at 200 to 225 (lower the better) with 2 or 3 hours of smoke and take it to an IT of 125 for rare or 130 for medium rare - any higher than that - just eat dog food!  Of course let it rest for 15 minutes or more before slicing.  This will be like smoked prime rib.  The Sirloin tip can also be done this way, but needs to be sliced very thin.

Those two roasts are from the hind leg of the cow/steer/bull.  If you could find something from the shoulder, it would likely smoke better.  That is where the chuck is from - also called, blade roast, shoulder blade roast, 7 bone roast.  Thicker the better.  But smoke it at 225 to 250 until an IT of 185 for slicing, or 195 to 205 for pull apart.  Some will place the roast in foil at about 165 IT, with a splash of liquid, then finish out the cook to 200-205 IT.  Any way, mighty tasty.  The sirloin tip can be done this way (foiled) also.  The tip is a lean cut of meat that needs the braising time in the foil to get tender without drying out. 

Another recipe - particularly good with chucks

Bourbon  Roast

5lb or thereabouts Roast
1 tbsp. Smokey Mesquite seasoning mix
1 tbsp. Pepper (fresh ground)
16 oz. KC Masterpiece Steakhouse marinade
4 oz. Bourbon Whisky
4 tbsp. Dark Brown Sugar
Cayenne to your hotness quotient

Mix 8 ounces of the steakhouse marinade and 2 ounces of the bourbon in a Ziploc bag and place the chuck roast in the bag for at least 8 hours of marinating before smoking.

Place all of the dry ingredients in a bowl and mix well.
Apply the dry rub to the marinated meat from the night before. Cover the entire meat with the rub.

Mix the remaining bourbon with the unused marinade and use as a basting solution after the first hour in the smoker. Baste every ½ hour until done.

Place on the smoker and cook to an internal temperature of 130 to 200 degrees (Depends on cut)

Allow to rest for 20 minutes to allow the juices to redistribute. Slice into steaks or pull.

Thanks Caneyscud:  Yes we do have blade roasts, so that will be my choice.  Also appreciate the recipe. :)
Hope to get working on my first smoke this weekend.
