Wild Birds?

Hey all! I just bought a new DBS and was wondering if anybody had any good recipes for wild birds such as Ruffed Grosue, Partridge or even Goose. I've made jerky in my old piece of crap smoker, but would like to try new things...Anything would help!

Brining is always a good first step.

The addition of a fat layer or drip is usually called into play.  Here is a recent thread which has some ideas.

Welcome to the forum KS.  Keep that vent wide open for poultry in order to get rid of the moisture.

All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.
