Breakfast Sausage

I made some of these babie yesterday, actually about 7 pounds worth
I started with a High Mountain kit and added some maple concentrate and 1 tsp of liquid smoke
Great results except for the linking part, you can read about those issues in another post

You can really smell the maple as they are cooking, the smoke does not seem to  be over powering

Here they are cooking up and yes, they taste as good as they look !

All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Would you like smoke with that sir ?

They do look good!! Who cares if the links are not perfect it is the taste that counts.

I like your idea of adding maple to the mix.   I bought some maple flavoured ones from Hi Mountain and they were a real disappointment.   They had no flavour at all.   I've made the original blend and they were great.    I'll keep this in mind next time.

You really can taste the maple and the aroma when they are cooking is deadly too

they look good.. yesterday must have been sausage making day.. I made up venison breaskfast/italian & polish sausages too..care to share the maple recipe?

There is really no recipe to share
I just added some maple sugar concentrate
I tend to start anything I make with the base ingedients and cannot resist the urge "to make it my own"
I have trouble following directions and added what I thought was enough and probably could have used a little more
In retrospect, I should have added some pure maple syrup as well

Good luck with this.  It was easier than I thought although next time I will be filling the casings short and trying the twist as you go technique

I just starting out with the link making.. the twisting as you go must be a learned art form & I'm failing.. ;D

Sometimes you have to kind of pinch and mush the sausage out of the way, working it back and forth before you twist. It usually goes a little easier if your fingers are wet.

I've done that before and 10.5 aint kidden you need to be sober to do that.  ::)
