cure for venison sausage

Once the sausage is cured and smoked, it really should be stored like regular fresh cooked sausage. The shelf life (in the refrigerator/freezer) will be a little longer. The exceptions are sausages that have been dried, or semi-dry. These sausages are protected from harmful bacteria because they don't have the available water the bacteria needs to grow.
