Beer and Garlic sausage

Was in the mood for sausage on a bun, so off to the butcher picked up
10 pounds of Boston butt.

Searched through a dozen or so recipes and took a little form here and there.

This is the recipe i used.

1o lbs pork butt

10 tsp kosher salt
7 tsp cracked black pepper
3 TBS granulated garlic
2 TBS minced garlic
4 tsp onion powder
2 TBS red pepper flakes
2 TPS parsley flakes
1.5    bottles beer

Here's how they looked stuffed in hog casing

Off to the BBQ with a few testers

Finished product

All I can say is, they are yummy.

They sure look good enough to eat.  :)

Them look really good!!!

If your anything like me there isn't enough garlic in the recipe. When I do a 10lb batch I usually put about 8-10 big cloves in there. I have a garlic press to smash them all over the top then mix it in. They taste good the first day but they taste even better after the fresh garlic gets a chance to permeate the sausages. I am not saying there is anything wrong with how you did yours. Just saying I really like garlic almost as much as I like Bacon!

That looks like a very interesting low salt sausage.

I also love garlic Tenpoint5, just about everything I make
is loaded with garlic. Especially my garlic Kielbasa.
I Was trying to find a happy medium for a quick BBQ sausage
the red pepper flakes (cayenne) add a nice flavor to the
mix, not hot by any means, just a nice little spice to the taste.

Any way if you're a garlic fan and you like Caesar salad I have

I am really interested in trying this recipe.  One problem.  The wife is allergic to hopps.  What could be substituted for the beer?

My Garlic sausage recipe calls for dry white wine instead of beer. 1 cup for 5 pounds

You mean there are other people out there that are as obsessed with garlic as I am?????  The sausage looks great.  Can you send me some.  No grinder or stuffer yet so I will have to drool over there pics for a while.

Smoke some - can I have the Cesar dressing recipe please

Make a gallon of stove top beer and leave out the hops...
