Smoked Summer Sausage

Well i wanted to look at one of the summer sausages i did in the smokehouse. Normally i let it sit for a few days.

Casing on before cutting.


End cut off


Casing peeling off good.





Peeled with no blemishes all the way to the end  ;D



Looks and taste great. Letting the red pepper flakes sit in the water for 30 mins really gave it a nice taste.

Wow! That looks amazing. I really wanna get into the sausage/snack stick making. I've been avoiding it for a while now, but I think its time I bought a stuffer...

I've seen the reference books on the recipe site, which of those books or any others that have come across would you recommend for someone with no sausage making experience?

drew, if your going to start with any kinds of sausage you might want to get Ryteks book. Easy recipes you can tweak and don't have to DOT the I's and X the T's so to speak.

Don't always believe what the commy USDA wants you to do.

Some people call Great Sausage Recipes and Meat Curing a bible.

I call it good readin and someting to refer back to when I get a brain cramp.
