I finally get to do some smoking.

Hello everyone I live just south of Tulsa Ok. I have a wife and 4 kids.  

I bought my 4 Rack Digital Smoker as a father day's gift on June 13th and I am still waiting to do some smoking.  I know I know but it is my own fault I umpire baseball and have been almost every weekend since March, but I am off this weekend and only one weekend left that.  I hope to get to smoke this weekend.  I just don't knwo where to start I have so much I want to smoke from pork, to beef, to chicken and fish, and even some cheese.  I also have some quial and pheasant in the freezer.  WOW I am like a kid in a candy store for this weekend. I will be spending a lot of time here now and will be going through all the post.  I hope to get to know you all and and open to any adivse given to me.

Hi Bo and welcome to the forum.

Chicken is good to practice on; fairly inexpensive.  Cut it in half; breast and backbones out.  I'd do the chicken in a 'standard' brine.  That's a gallon of water, one cup of kosher salt and 1/2 cup of sugar.  You can add sage, garlic or whatever else you might like.  Four hours should do it.  Dry it and oil or rub it if you like.  1:20 to 1:40 of a lighter wood (apple or pecan) should do for the smoke.  Cook until not quite done.  Remove it and put it in a hot oven or grill to crisp the skin and finish it off.

When I first got my OBS I wanted to smoke all kinds of stuff at once.  It doesn't work.

Keep notes on what you do.  They'll help you to improve.  At my age, I forgot what I did yesterday.

Oh, with four kids you might need two chickens.

Welcome Bo. I feel your pain.  Kids sports take up a lot of time.  I am actually in Tulsa tonight up from Dallas on business.  About to hit a casino.

Just throw whatever you want the most in there along with your second and third choice.  Can't go wrong.
