I am going to make some Landjager in the next few week but do not have a press.
Does anyone know the dimensions needed for the press so I can make my own.

Thanks in advance.

Smokin Soon

Fire bricks and parchment paper works ok in a pinch.

I'm thinking that after stuffing use a baking sheet with bricks on it, lay on top of sausages and keep in fridge overnight before smoking. Should be flat on both sides.
I will use 32mm hog casings.

What ya think?

That's a good idea. Even out the weight. I will try that next time!

I'm going to break out the table saw and rip some oak strips 1/2 x 1 1/2 and chop em to 8"

I figure 2 strips 8" long 1 1/4" apart on one board and the other board (top) presser 1 strip to press the sausage flat between the bottom 2 strips. Both boards having enough slots to press 12 sticks at a time.
