Sunday Night Football briskets

The Dolphins home opener will be on national tv. Sweet.

Some friends want to tailgate and asked me to do some brisket and ribs.

I did one brisket with wild willys number onederful rub, the other with the salt lick clone.

This should be a real measuring gauge for the Dolphins. They have looked pretty good in the previous two games. Jets have not looked as good so far. A showdown with the current division leaders and last years Division Champions.

Will be watching and I have to tell you I hope the Dolphins kick some a.....

I'm hosting a party here to watch the Bengals take on the Panthers.

The 2nd brisket is done - no pic yet - and the ribs just came off, so the "meat cooler" is packed.

I put 2 foil-wrapped bricks in a 500F oven for 20 minutes and put them in the bottom of the cooler, then the ribs (all four racks wrapped together) then the two briskets on top.

There is not room in that cooler for a toothpick!

They INHALED the brisket - two of my friends are texas natives - and they wholeheartedly approved.

The method with the bricks in the bottom of the cooler - all I can say is WOW. I put that stuff in there @~1300, served two racks of ribs and 1 brisket about 1700, put it all back in the cooler about 1900 - and it was still at a food safe temp at 0230 this morning when I got home and put the meat in the fridge. We did not have enough (cold) cooler space for the meat at the game, so the only option was to keep it hot.
