Hickory Slim Jims

After yesterdays error  :D  :D

I got some hickory smokehouse style slim jims going. Stuffed into natural sheep casings which are close to 17-19mm in size.




With the small diameter of the casings i had to add another hanger to the 6 rack.



Have my PID working from start 140* to finish at 175*....................NO FAT-OUT DAY  :D  :D

Looking better than yesterday. Forgot to mention i used 1 T of Trehalose in the mix.

3.5 hours into the smoke. PID at 165* now doing the 2 round of smoke (3 pucks) IT of sticks 127.6 close to stall  :-\

A good sausage smoking day is not having a fat-out  ;D

These came out pretty good. Blooming now for 2 hours then fridge and cut up tomorrow. The ones on the dowl got done faster and are already starting to darken.

Got the slim jimmys cut up.




Ran out of foodsaver vac bags so i had to use the back up system  :D
