I love all the ideas this has spurred. If your having a hard time finding white cheese curds a good substitute is mozzarella cheese. Just don't tell the poutine purists, poutine can tend to be a bit of a religion.

Let's all agree to meet in Toronto at Smoke's for the Triple Pork Poutine!  Followed immediately by a visit to the neareast cardiac ward.  Dang that sounds good.

Deb,  funny, you should bring that up.  My wife does a bible study with a lady who raises goats.  Just this weekend she said I could come and watch her make Chevre.  Now only to find a time I can go!  My wife did not know about the goats and cheese till we met the lady by chance in a restaurant.  Somehow conversation got to butter and how much we liked goat butter.  She asked where we got goat butter and that goat butter was real hard to make.  I asked her how she knew that - that is when she told us about her goats.
