I forgot to post the pepperoni i made.

Smoked this morning for 4 hours.

Cooling with collagen casings on, 32mm




2 hours cooled and peeled the casings off. Now ready for vac bags.

Here is pepperoni cut up. Next time add 1 more Tbs of each Paprika and dextrose. But it is good now ;D
