Eggplant?

So SWMBO planted Eggplant this year for the first time, only two plants
but they were incredibly prolific and we now have an abundance of
Eggplant. Not being a fan of Eggplant I have no idea on how to cook it and
I do most of the cooking. Does anyone have any good recipes for Smoked
Eggplant?

Well ross you see that square metal thing on the floor that opens when you step on the pedal, from all the Eggplant I have had the best thing you can do with it is store it in that can. JMO (just my opinion)  ;D

Actually, I have come to like eggplant.  Ross, slice it into 1/2-3/4 inch slabs or coins.  Rub with olive oil.  Salt and pepper to taste and put it on your grill.  It's really quite good.

Like chicken parmesean?  You can do the same thing with eggplant.  Eggplant is actually a flavor sponge.  Takes up the flavor of whatever you're cooking with it.

I like eggplant as well, but I don't think I would put it in the smoker...

I view eggplant a lot like tofu -- pretty bland on it's own but, like KyNola said, it's a flavor sponge for whatever you put it with.  Slices will soak up a ton of olive oil.  Best I've had is stir fried (peel, slice, cube, ginger, garlic, some dark soy (the sweet stuff), sometimes start with minced pork.  You'll find it used in a lot of Mediterranean dishes.

We tried it in the smoker, DON"T do it.
The wife almost wanted to get rid of the
Bradley after that one. Thanks for the ideas.

If that is the case then the last time I tried it it tasted like mold. I wonder what she cooked it with? It was supposed to be Eggplant parmesan.

Sorry for the late response, I just reading this for the first time.

I also like eggplant, and have smoked it prior to adding it to other dishes. I generally prep it as per the directions in the recipe, then add 40 minutes of pecan - cold smoked. After smoking I add it to the recipe. I found that if it is not an Asian variety of eggplant, it is best to peel it or the skin may get too tough. If you do a google search, you will find many recipes for eggplant. Many of the current food magazine issues have eggplant recipes.

Here is a recipe for grilled eggplant, you could probably smoke the eggplant prior to grilling.

My all time favourite is Eggplant Tempura followed by Baba Ganouj-which is delicious when made with Habanero Smoker's cold smoked product.
(Failing that you can always cheat with a few drops of liquid smoke).

Moussaka is good, but after getting a little green on a cruise down the Nile a few years ago, I haven't had it.  But it is good.


Love it floured and fried - just make sure the oil is to temp before attempting or you end up with a very soggy mess.

My daughter last weekend made an eggplant parmesan casserole for my wife and I and it was terrific.

Another favorite way is to dice it up rather small and put a bunch in with hamburger while browning it.  Add lots of garlic, salt and pepper.  Put a little cream cheese in it to make it somewhat creamy, then topped it with shredded cheddar.  I have no idea what to call the dish - but it is good.

BTW - If you smoke the eggplant first and add a little CT - can you call it
