Jerky on a Saturday

got my PID back just in time to do some jerky. My daughter is coming to visit next weekend and asked if I would make her some beef jerky to take back. She works for the FDA so I guess I can honestly say my jerky is FDA approved. ;  I am only doing 2 1/2 lbs. No particular reason, it is just the amount of meat I had handy.

Here is a pic of the meat stips marinading last night



In the Bradley at 150* with 2 pucks of hickory.


More pics in about 4-6 hours.

Now I have one problem. These are for my daughter who comes home next weekend. Unfortunately I did a quality check and as good as they are there may be nothing left when she gets here.

Solution! With the "snow event" hitting tomorrow night your going to be stuck at home on Monday so rush out in the morning and buy some more meat and do it again!   ;D

Anywhere from 3-6 inches plus freezing rain on Mon -Tues. It is not much for you guys but we basically get paralyzed when we get anything that stays on the roads. It we got that much and the temp went up where the roads are clear we would be okay but it is supposed to stay cold. The freezing rain usually ends up in downing power lines.
But I am ok, stocked up on beer and JD.

My kind of meat Gus! Mine goes in tomorrow and hopefully looks as good as yours. I wacked up some brisket flats for mine and that was do much damn work. Oh well, live and learn :)
