I have been talking with the owner and trying to get some stuff put together to be more home sausage maker friendly. Such as a small kit that will get you a packet of seasoning (A.C. Leggs) and enough casings to make that entire packet of seasoning. That way you wouldn't have to purchase a caddy or they wouldn't have open caddies in the shop.

Are those the ICR processed or the VISTA-NIPPI processed casings?

These are from Dupey Equipment in Iowa
Yes, I understand that, however page 4 of their catalog shows 2 varieties of collagen casings, ICR Processed and VISTA-NIPPI Processed. Which version did you buy? Maybe I just don't understand the difference between the two types.

Thanks very much for your quick response. The 17mm casings must be on the elusive page 5 of the catalog that we currently can't access. I'll call and see if they're still available.

Those string tied casings shure make some beautiful sausages. :)
