Big Easy lemon stuffed cornish game hens

So I got a couple cornish game hens to cook. I stuffed them with lemon wedges rolled in some hickory smoked kosher salt. Then I used the Pinch of Sizzle All Purpose Rub on the outside of them. Loaded the Tommy Ring in The Big Easy with applewood and cooked them to a IT of 170 ;D

Natural Gas 4 burner stainless RED with auto-clean
2 TBEs(1 natural gas & 1 LP gas)
OBS(Auberins dual probe PID, 900w finned element & convection fan mods)
2011 Memphis Select Pellet Smoker
BBQ Grillware vertical smoker(oven thermostat installed & converted to natural gas)

Nice!  I need to pull my Big Easy out of the basement and use it one of these days.

Looks great.  I love stuffing lemon, lime and orange up chicken.  Gives great flavor.

Great looking midget yard birds muebe!! Or now that we have new sheriffs in town do I need to be PC and say ... " little chicken yard birds " ???  ;D ;D

Gonna have to try using a "Tommy Ring" with some Bradley bisquettes in my SRG.  I guess in the SRG I would cook them with the lid closed for the smoke and on Low as per the instructions?

Crank up that SRG with a puck or two till it is smoking then turn down low. With the lid down you should get good smoke penetration but I would leave the lid slightly propped so you do not smother the pucks too much.
