Greg's Spicy Sticks w/CT

Ok after reading about the BBQ spicy sticks I went ahead with the CT in lieu of the BBQ sauce. I used about 4 lbs of 85/15 and about 2.5 lbs of leftover pork chops I grinded up just for the heckuvit.

In the OBS to dry for an hour then 3 hours of hickory. 



They are smoking as I post.  Will put the finished product up and taste test later.

Looks good.

There might be a market for sausage makers in south Florida after all.

I can't find any curing supplies local, Gander mountain has a few things, but it's no Allied Kenco.

I used clear collagen casings 19mm for the first time.  I added a small amount of water and I think it was too much, I would just go with the cup of CT next time.   I dried em at 130* and the hickory is rolling, 2 more hours at 140*. 

I like the idea of dehydrating them after they reach IT of 150*.   Do I skip the ice bath/blooming period if I want to dehydrate further?   Oh, yeah, I don't have a dehydrator......I can just throw them in the oven or OBS for a few hours??

All done.   I left them in the Bradley to dehydrate without a bath.  Maybe thats why they were a little dry.   10 seconds in the nuker and they come back to life though!  Looks like I have to start looking into a real dehydrator. 





They came out slightly dryer than the regular sticks, maybe because I mixed in pork or used a little too much mixture. They are good and spicy.  I would make them again with a bit less liquid.

I made some sticks the other day of ground brisket/pork and was kinda

dissapointed when I ate some fresh from the smoker.

They were kinda dry.

A day later after a fridge ride .......... they were perfect.

A tip for you. Not intended to diss your smoke or anything.

Try to leave gaps between the sticks this way you wont have white on the casing where they were touching.

Again not trying to be an @$$ just trying to help get the best smoked for ya'll

NePas ->No diss at all.  I am still pretty new to all this and appreciate all comments and criticisms, especially from you.  I was wondering what the Heck that white streak was!!   Actually I think I needed to tie them off into straight sticks  or hang them from the top in the future if I keep the big loops.

I see you got a promotion to MODERATOR! - Congrats!
